Creamy Vegan Pasta

Feeling Naughty but don't want to pay for it tomorrow? Then this recipe is for you. We started with San Remo's Chickpea Pulse pasta and added broccoli for the last 3 min and gently boiled it until it was al dente and set it a side. In this recipe we Sautéed Mushrooms and spinach and garlic until the mushrooms were golden brown. We then added a 1 cup of water and 1 cup of cashew cream (Recipe below)and simmered for 2 mins. The final step is simple, add the pasta and broccoli.. and tell me you don't ask for another serve.. YUMMMM

Pasta Recipe

2 cups of Mushrooms

1 cup of Spinach

1 tsp crushed Garlic

1 cup Broccoli

S & P to taste

Cashew Cream: Soak 1 cup of cashews overnight (or a couple of hours) Then strain and add a third a cup of water (more or less depending on your desired consistency) and blitz. Add salt and Pepper to taste and rest for 10-15 mins in fridge
